Global Kids Cooking Camp with Amanda Cushman – Hands-on class for ages 9-14

This week-long camp is a hands-on exploration of the culinary world that teaches campers kitchen fundamentals (basic knife skills, measuring, mixing, following recipes, and kitchen safety) while introducing them to new foods from around the world. Each day, we will create specific meals inspired by global cuisine, from India to the Mediterranean. Students eat the food they cook and learn to enjoy new tastes and flavors. Local fresh ingredients serve as a teaching tool to demonstrate seasonal availability of fruits and vegetables in our area.
We make four recipes each day; appetizer, entree, side and dessert.
Sample Menu: Best Ever Spicy Gazpacho with Garlic Croutons, Grilled Mediterranean Chicken with Lemon and Fresh Herbs, Tuscan Pasta with Caramelized Onions and Burrata, Tiramisu with Cinnamon Whipped Cream

Amanda Cushman of Chapel Hill Cooking Classes is a culinary educator, cookbook author, writer, and recipe developer who has cooked professionally for over thirty years.
Amanda began her food career in catering in New York City and worked with Martha Stewart and Glorious Foods before becoming a recipe developer for Food & Wine, Cooking Light, Vegetarian Times, Fine Cooking, and Ladies Home Journal. She was a private chef to a number of clients including James Robinson (CEO of American Express) and Amy Levin (Editor in Chief of Glamour). Amanda’s private classes were a big hit in Los Angeles with clients such as Neil Patrick Harris, Molly Sims, Anne Archer, and Randy Newman.
Amanda recently relocated to Durham where she continues to teach in private homes, teach cooking classes and kids’ camps, and teach skill classes (such as knife skills). Amanda has developed recipes for magazines such as Food & Wine and newspapers like The News & Observer. She has also developed recipes for food startups such as Deep River Snacks and Jenny’s Artisan Crisps.
For her cooking classes, Amanda focuses on global menus from locations worldwide, anywhere from Thailand to Tuscany. Prices are $70 to $75 per person, which includes a complete five-course meal. Check back with Blue Dogwood for upcoming classes.
