We strive at Left Bank Butchery to honor the animals that our farms raises. We are dedicated to whole animal butchery and create charcuterie, roasts, and steaks to best utilize these animals. Our main shop is located in Saxapahaw, NC, across the street from our pig farm (Cane Creek Farm), ten minutes away from our grass-fed beef farm (Braeburn Farm), and smack in the middle of a village that is dedicated to changing our food system. By buying whole animals, we are able to assure the quality of, and full utilization of our meat, while also making the best meat more affordable through our cutting and preservation techniques. In addition to our presence at the Carrboro Farmers Market, we are excited to open a satellite location at Blue Dogwood Public Market in Chapel Hill, making our fresh meat more available to our community.
We know at Left Bank that creating a food system based around pasture-raised meats requires a shift in thinking for our customers. Through seam butchery (isolating individual muscles) you will see steaks that you've likely never heard of. And through our love of charcuterie, you will have opportunities to learn of traditional cured meats. Together, with our vast knowledge of cooking (and maybe yours!), we can rediscover how communities have sustainably fed themselves in the past. Most importantly, we believe that good food can be sustainable, accessible to all, and a whole lot of fun.
Beyond Organic with Braeburn Farm - November 7, 2016
We're proud to have all of beef coming from Braeburn Farm, which is just 12 miles from our butcher shop. Braeburn has long been at the forefront of progressive pasture management. This means that not only is Braeburn raising the highest quality grass fed beef, but that the farm itself is healing the environment through carbon sequestration, and wildlife habitat management. This is truly a special place.
